Vegetable Hariyali Pulao
Ingredients:-
1. Rice 1 n half cup,
2. Coriander leaves 1 Cup
3. Green chillies 4
4. Mixed vegetables (Cauliflower ,French beans,Potato,green peas,carrot)
5. Onion 1 sliced.
6. Chopped Fenugreek leaves(Methi leaves)
7. 1 Big spoon of ginger garlic paste
8. 1 Spoon (Black cumin seeds)Shahjeera,2 Starflower,3/4 Green Cardamon, 1 Inch Cinnamon stick,Black pepper 7/8
9. Milk 1 cup
10. Cashewnuts 10/15
11. Almonds 10 (Optional)
12. Few raisins
13. Oil or Ghee
How to make :
1. Soak rice in water for 30 min i used basmati kani you can use as per your choice.
2. Chop all the vegetables along with methi leaves..chop onions slices.
3. Grind coriander leaves along with green chillies (You can take green chillies as per your requirement ..
4. Pour oil or ghee in a round pan add all garam masala and let it spulter lil then add sliced onion and saute till it turns soft and golden brown.
5. Add ginger garlic paste and saute for few min.Then add fenugreek(Methi) leave and saute till methi leaves raw smell goes off and then add green masala..and saute for some time more..
6. At last add vegetables and dry fruits and saute,add lil salt. On low flame close the lid and let it cook for sometime till vegetable turn little soft...
7. Then open the lid and add rice and saute till water evaporates and again on low flame close lid for 5 min and then open n add milk mix it properly (Add a cup of milk along with water or milk itself for rice to cook)
8. Add water as per the requirement and at last salt. Then on very low flame let the rice cook.
9. Make sure u keep on checking rice and Cauliflower specially if they r cooked in rice.
(You can even boil all chopped vegetables and let it cook 50 percent and then add in pulao to cook full)
