Vegetable Pulao Recipe
Ingredients:-
1. Rice 1 cup
2. Mixed vegetables ( You can add whatever are the seasonal vegetable available)
3. Onion sliced.
4. 1 Big spoon of ginger garlic paste
5. 1 Spoon (Black cumin seeds) Shah jeera, 1 Inch Cinnamon stick,4/5 Black pepper,3 Bay leaf , 3/4 Cloves
6. green Chili's (As per your requirement)
7. 1 Tomato
8. Salt
9. Oil or Ghee
How to make :
1. Soak rice in water for 30 min i used basmati kani you can use as per your choice.
2. Chop all the vegetables..chop onions slices and keep chilies whole if you do not want Pulao to be very spicy
3. Pour oil or ghee in a round pan with heavy bottom.
4. Add sliced onion and saute till it becomes translucent, Then add Ginger garlic paste.
5. Once the raw smell disappears add spices mix and saute on low flame for few seconds.
6. At last add vegetables saute,add little salt. On low flame close the lid and let it cook for sometime till vegetable turn little soft...
7. Once vegetable get little soft add rice and saute for 1 minute on low flame.
8. Add water as per the requirement and at last salt. Then on high flame let the rice cook with the lid closed till water starts evaporating.
9. On other side keep iron tava on low flame to heat.
10. Once water evaporates, Shift the pan on tava and cover the pan with muslin cloth and close with lip keeping some heavy object on top. ( Keeping heavy object helps in cooking rice on dum and will make it more tastier).
11. In between keep on checking if rice is cooked by pressing rice grained on your finger tip.
12. Once it is ready serve it with Raita or Onion Salad.
